March is Out like a Lamb

Last time I checked in, I wrote about the prospect of Brittany and I heading to Sitka for the Southeast Cluster Assembly.  On the 8th, we got on the afternoon jet out of Wrangell and barely made it to Ketchikan.  It was the worst flight I have ever been on. I even

had to get out the little puke bag because I didn’t think I was going to make it.  After we landed a guy seated next to us informed us he was a pilot and that was one of the worst flights he had ever been on too.  Crazy!  We happily got off the plane to wait three hours in the airport for our connecting flight to Juneau and finally Sitka.

As you might have guessed, after sitting in the airport for over three hours a voice came over the intercom and told us our flight could not land and we would have to rebook for the following day.  Great!  After the initial panic, we set up our evening arrangements at an adorable locally owned hotel and rebooked a flight for the 9th.  As we walked out into the parking area, we were nearly blown away!  The wind was insane, at that point we were glad to not have gotten on another plane that night!  

 Our flight on the 9th was much nicer than the prior day.  We made it to Sitka in time to have dinner with all the Pastors and other delegates.  Our weekend was filled with discussion, laughter, and fun.  We were housed with an couple of retired teachers.  They were such wonderful people and the husband was full of historical knowledge of Sitka and the Lutheran church.  He was an amazing tour guide.  There is so much to say about our mini-vacation that I could make a blog post about just our trip.  I have many other things to write about too, so I will just say overall the trip to Sitka was an amazing one and we both hope to represent our Church at SE Assembly again in the years to come.  
While many great things came of us going to Sitka, I would like to highlight one of them.  As a bible study we were discussing gifts.  I had mentioned how my friends and I are musically inclined, but have yet to offer these gifts to the church.  With a little encouragement from my new friends, I decided we would play the music at the church!  So when I got home, I spoke to Dulcey and Ryan and they loved the idea.  I ordered myself a djembe (hand drum) and we are scheduled to lead worship on Easter Sunday!  If all goes well, I would like to make it a monthly treat for our congregation.

One of our grocery stores had a bulk sale a few weeks ago so Ryan and I went shopping.  We were checking out the meat section, which I do every time I go to the store (Thanks Dad!), and debated upon buying a whole beef tenderloin.  We decided we deserved a delicious treat and that I would try my hand at making filet minion.  Well we got home and I found some youtube videos about cutting up the tenderloin and making filet minion.  Unfortunately, I did not realize exactly what a whole tenderloin was when I bought it.  Needless to say I had to learn how to be a butcher to get all the right cuts of meat off of the hunk of meat!  I think I did a pretty good job and dinner was delicious! 


We have been practicing our domestic skills lately.  I made some yummy omelets for breakfast one saturday morning.  Thanks to Dad for always making us omelets on the weekends!  I am a self-proclaimed, better omelets maker than many restaurants! 
Also I made corned beef, cabbage, and baby red potatoes for St. Patrick’s Day.  It was pretty good, but definitely a one-time-a-year dinner.  
I also made a cute scarf!  Ryan has been perfecting his bread making skills.  He recently purchased a bulk order of rye flour and dark whole wheat flour.  His newest bread is a no-knead bread.  It turned out ugly, but he says is tastes great. 



My job changed a little over the last week.  The last quarter of the year I am teaching Environmental studies to the Biology classes.  This past week we watched The Lorax (the old movie) and discussed local issues and solutions.  So far I am really enjoying teaching this subject to the students and they seem to be enjoying learning about it.  

In just over two months, Ryan, Milo, and I will be hitting the road again.  We are leaving on the June 6th ferry and driving to Wisconsin/ Michigan.  My brain has been focused on summer lately.  I got paid last week and decided now is as good time as ever to start buying our summer camping supplies.  So we became members of REI (to reap the benefits of the current 20% off sale) and bought a nice 3-person tent and footprint.  It showed up two days ago and I set it up in our extra room!  It is super nice and we cannot wait to use it!  We are also looking forward to the Annual Couple Camping Trip in July!  
Milo was moving too much!  But Ryan sure is cute! 
We have completed 6 weeks of p90x!  Ryan has lost several inches and about 10 pounds.  He is looking pretty amazing!  I have lost several inches and about 3 pounds.  It is hard for me to watch the weight melt off of him and still be as heavy as I was 6 weeks ago.  However, I feel better and I can do much more than before.  Yesterday, I was able to do a pretty difficult yoga move called “wheel” for the first time.  It felt pretty amazing!  I love our new diet choices.  Even though at times I miss eating carb after carb, I really have never felt better in my life.  I cannot wait to get back to a healthy weight and eat healthy...life will be so great!  
March has been pretty cold and dreary in Wrangell.  However, today March is saying goodbye with a beautiful, sunshiny day!
